I managed to get the VRAM viewer application working, and started a playthrough, so I ripped this from the Swamps Flood Level.

I started ripping from the Learning Games, and they are weird. They have quite a few odd differences.
In Rayman1 (PS1), most of the sprites were 8bit, while in the learning games, they are 4bit, maybe to save space in the memory. Most of the time this isn't all that noticeable though, although, when it is, the sprites look quite discoloured and ugly. (Edit: Sprite detail doesn't seem to be lowered in the Amazing Learning Games Win PC)
Instead of the backgrounds being accessed from a file, the backgrounds are loaded into the memory in the learning games. These backgrounds are also lower quality, and as they are a single image, don't allow parallex scrolling.
So, I managed to rip some backgrounds!

Unfortunately, the map dots are added to the background when they are loaded.
It should be possible to recover the original background, but its probably stored in some encrypted file.
So I started to remove these dots. There are still a lot though.

Most of the backgrounds are just lower quality Rayman 1 ones (edit: Amazing Learning Games Win PC Also seems to have these, at least in the demo), like so:

I'm not sure if this is a new background, or just horribly distorted.
There also seem to be some somewhat new backgrounds.
There are a lot more, but I didn't think they were worth ripping.
I haven't managed to get any of the sprites with the right color palette yet, but I can see that there's a lot of strange stuff.
Like that music sign is still loaded into the memory! As well as a bunch of stuff that (I think) only appears in the original game, like the boss icons. There also seems to be some new stuff that is never used (I think), like the Betilla icon thats used in Rayman Designer for the Mr. Dark spell cure.
EDIT: I didn't realise that this was used ingame somehow.

Its the bouncy, normal, and disappearing cloud sprites, although I haven't found the topper that goes on the disappearing clouds.
