Like others have said, use GIMP to create transparency. But anyway, it was probably either screenshots of the game with the background removed or something, or just sprites put in perfect places.

They were actually the original maps on the Ubisoft site, though someone apparently added the Rayman 3 sprite to represent a starting point.

Speaking of Rayman 3 sprites
I've started ripping from the R3GBA some things ripped so far...

My main target is the teensies from the end of the level-huds.
Suprizingly enough, R3GBA sprites actually don't look to bad when put over the R1 stuff (like the end post and Murphy's stone)
