Yes, that would be a Pea God/Monster, very similar in looks to Eig, a typical Piranha, presumably Mr. Dark, Ant Soldiers. I named four because I'm not sure of the name of the first character.

The characters talk normally in PSX version and talk gibberish in Dreamcast version.
There's a Ninjaws boss in PSX version in Sanctuary of Stone and Fire.
You can unlock the original Rayman 2 level in PSX version.

1 - The sky outside of Mr. Dark's castle of Candy Chateau is visible in Saturn instead of PS1
2 - The sky backgrounds of Saturn (Band Land) has got a flashing animation when compared with PS1

Blimey, I'm not actually sure about the cages, given the similarities between the PS1 and Saturn versions I had assumed that the cage locations were the same.
EDIT: From the gameplay footage I've seen so far, the cages seem to be in identical places to that of the PS1 version.

Differences between Saturn and PS1 versions:
1. There are several level differences, such as Mr Stone's Peaks omitting a phase and the restructuring of the level Candy Chateau.
2. Rayman's "Yeah!" at the end of a level is slightly different (more developed) in the Saturn version.
3.The PlayStation version has much higher quility music due to the CD technology that it had.

Ok, I think I might need to reiterate, I am asking about the differences between the PS1 version and the SEGA Saturn version.
Some answers seem to show that it's writer believes I asked for the differences between the PS1 and Jaguar versions.
