This happened to me as well.
Though I mostly agree with Haruka and Rayfist again. In Origins, you complete a set of goals per level and unlock costumes and then that's it. There is no where further you can progress. However in Rayman 3, that isn't so. The scores are something that can be forever improved upon, and there's there's actual initiative to host competitions, including the Hall of Fame on this site, because there's always ways to one-up the others. Again in Origins, after you obtain all the medals, there's hardly much more to do. The game involves little to no strategy, planning, or anything of the sort.

Not only strategy and planning, but a slice of quick-thinking during the process of making a combo, if you think about it, you really need to use your brain with these.

You mean smashing the attack button as fast as you can?

I also have got a love/hate relationship with Rayman 3 too. Forgetting Origins for a moment, R3HH is the game that I've played from the beginning to the end less times (I'm not counting the replaying for a better score). Rayman 1, I think that joining up every version I've beaten it something like 7 times at the moment. Now between RO and R3, RO is the one I've played less. Since I've completed 100% three times (yes, catched everything, including beating up Big Mama) I've lost interest in replaying the game. I find it even easier than R2.

I've got all lum medals, every time trial trophy, unlocked every character, ran LotLD dozen times and... lost interest. I just don't know what am I supposed to do with this game anymore. I don't even want to replay it. R2? I replayed it maybe 6 or 7 times (I still want to flip my desk and fling computer out of window at battle with Razorbeard) R3? I replayed it so many times I've lost my count, not for score, just... because I like it?
Here's the problem with Rayman Origins:
Having to get all of your abilities once again when you replay it is pretty boring, not exactly because you feel weak and that you're limited to do almost nothing (because in general, that's the way how Rayman 1 plays) but basically because when you adquire an ability, the full level is dedicated to that ability. It feels so lineal that you can only enjoy it during the first 2 or 3 times you play it. In Rayman 1, once you get an ability, you can go back to one of the first levels, where that ability is required to unlock an electoon cage. I know they tried to do that, but they scrapped the idea so players wouldn't be forced to buy "chapter 1" if they have "chapter 2"... BUT THE GAME IS A FULL RETAIL NOW!!
Now... in Rayman Origins you can get all of the collectables on the first try, basically because there's only one kind of collectable: Electoons. Even lums give you Electoons, and in general, getting all of the lums isn't mandatory, you can't go back and say "oh, yeah, I forgot that lum in the waterfall" because it's not necessary, lums come back, and you can fullfill the Magician's bar and adquire a Lum Medal without trying. Of course, there are time attack levels, but they're not even challenging, just move the analog stick to the right and kill whatever is on your way. They're so easy that they're tedious, you feel forced to play these levels just to get the last electoon.
Finally, Collecting everything in Rayman 1, 2 and 3 requires skills and a good sense of the locations. In Rayman 1, cages are almost unpredictable and pretty hard to get, in Rayman 2, there are so many collectables and the world is so big that you may forget at least one cage. In Rayman 3... ehm... you need to explore, because replaying a level just for 1 cage is a nightmare. Rayman Origins doesn't require any of that, it just requires memory. Once you know where's the electoon door, you never forget it, because they're in predictable places. The system is based on Donkey Kong Country Returns, but it doesn't offer any challenge, because you can respawn as much as you want to kill the guys who killed you. You must be a baby if you don't get the Electoons at least on the 10th try.

You see, this means that the good old games were more difficult than the ones coming out nowadays, but they were better just because of this.

Oh, I actually thought you were referring to Origins. Yeah, Rayman 3 has a lot more strategy involved.

It's so cool!!!
It's not that I hated Origins, it's just that once I'm done 100%'ing most games I end up never touching them again. In fact I never even beat a few games despite loving them to bits.

I'm with Rayman for 12 years: in other words since the Summer of 2000. Maybe the problem is really that: veteran Rayman fans prefer the older games, while the new ones don't see any issue in RO.
