This list is very poorly put together, but I'll list them in some nonsensical order:
My potential absolute favourites of all time:
Rayman 1
Assassin's Creed II
Grand Theft Auto IV
Red Dead Redemption
Notice how three of them are from within the last five years? That's just how it is. Now to pay homage to the above games:
Rayman 1 was one of the main sources of all my imagination and creativity. It kept me in awe and wonder for years, and whenever I thought of it's grand, luscious worlds, I can't help but drift into an imaginary world and live there for a while.
Assassin's Creed II actually had a similar effect to Rayman 1 on me, but in my teen years. This game- I can't even choose where to begin. It is utter perfection in what it is, a fantasy adventure through Italy in the magical times of the Renaissance. Every single time I think about this game, so many amazing memories fly through my head. Running around as youth Ezio in Florence, chasing your friends and racing your brother around the mysterious landscape waiting to unfold; riding a horse over a hill speckled with blood-red roses, along a gorgeous aurora-swept skyline with castles and forests in the distance; walking along the chillingly enchanted and peaceful rooftops of Venice with the candlelights illuminating the moats, and the fireflies dancing around you as you climb to the tallest bell tower. Not only are the visuals stunning and other-worldly, the story is truly thrilling. Never have a felt so engrossed and immersed into a tragically compelling story like I have an amazing novel before; the gameplay is also a wonder. It's one of the freshest games I had ever played at the time. This game is something wonderful. One of the greatest works of video game art ever in my opinion.
Grand Theft Auto IV is... GTA IV. What can I say? You had your Call of Duty's, supposedly the most realistic games around. GTA IV took this to a whole new level, and it is gritty. These characters feel real, the world around you feels real, so much so that it almost makes you hesitate before going through with your actions in the game. Not only does this grit realism make it so damn memorable, I've never had so much fun in a sandbox game before. Even to this day I pick it up every month or so and fuck around, after five years of owning it. The people physics (Euphoria) was unbelievable to me when I first played the game. It took me days to stall my jaw from dropping over this marvel of realtime technology.
Red Dead Redemption could considerably be Assassin's Creed II meets GTA IV, though I'm being very liberal with that statement. Western stores - mostly games at this point - were mostly very spaghettied and humourous. Here we have, like GTA IV, a very realistic setting. However, this game feels a bit more storybooked than GTA IV, where instead of GTA IV filling you with dread (in a positive way) with its unpredictability, Redemption is something of a Nirvana. John Marston, the protagonist, is a cynical yet morally-sturdy jerk treated unfairly by the authority. Even though the game has some really kickass moments where, for example, you're with three buddies throwing Molotov cocktails at a Mexican raft convoy, once the fight settles down and night approaches (in the real-time day-night cycle), you hear the crickets chirp up and you know it's time to lie down, light a fire and get some rest. Especially during the night, you re-realise the sombre atmosphere of the story itself. Even when it seems like you're approaching a happy ending that seems too good to be true, you reach it, but it doesn't seem fulfilling. You're virtually a criminal, and even though you can say you never saw it coming, you knew something like the actual ending would occur. For me, it's easily the greatest ending to a video game I've ever played, and you would have to be one apathetic bum to not want to shed a tear, or at the very least feel somewhat moved by it. John Marston is probably my favourite video game protagonist of all time.

Haha! Reminds me of when I was 9 years old, my Dad left the TV on paused for GTA, while he was in the shower and I went on a rampage of murdering people in his GTA data, he was pissed when he got back. Been playing a ton of TrackMania lately, and I've started to really appreciate how much there is to it, despite its simplicity. The standard set of levels didn't impress me, but there are some damn good user made tracks out there. I think it's starting to become one of my favourites.

Forgot to include WarioLand 4, that was my favorite out of the series.
The only Ape Escape I played was the first one, the remake on PSP, and I remember loving the hell out of it- damn, makes me want to replay that. I'll have to play 2 and 3 someday.

Tekken introduced me to fighting games, and it's pretty much my go-to franchise of the genre.
As for Ape Escape, that game is amazingly fun! I'll never stop loving it.

The Rayman series.
Crash Bandicoot (1 - 3, Twinsanity, (haven't tried out WoC or Titans)
Jak 1-3
Ratchet and Clank (Got Q-Force recently, will be playing it more when exams are finished)
Portal
Pokemon
Skyrim (I know some think it is one of the weaker entries in TES, but it was a nice starting point for me, and maybe I'll look into TES games)
Kirby (Though I haven't played it in a while, should get back into it when I get the chance)
Mario
Sonic the Hedgehog (I'm thinking of giving Colours a try)
inFamous series
Metroid (Still haven't beaten Super, Ridley is a right arse).

Ah last time I played Ape Escape was on the PSP- might re-buy it for my Vita
edit: Another game I should have put on that list is Conkers Bad Fur Day- my first "M" rated game in which I had a freaking awesome experience in. Certainly my favorite Rareware title to this day.

1. The first place are sharing Rayman and Crash Bandicoot, but Rayman has alot better fanbase so I guess it's a little more on top
