But I remember to listen Ratchet saying "Look, a plumber's crack!". Maybe this slangish expression isn't taken badly by PEGI? Or perhaps they didn't notice it.

Maybe in later re-release they changed rating to PEGI 7

I remember in the Spanish and Italian dubs where Murfy looked in the manual and must have said a word that meant "shit" because it bleeped. In the English dub that would have been "Puh-lease, who's responsible for this garbage?"

I don't know if it's in the english version but in french, when you miss a traget while using the missile, André shout something like "haha you missed it. I wonder how you are doing with girls."

Why was Rayman 3 censored in English even more so that instead of beep sounds they replaced sentance?

Because bleeps are too obvious? In a game like Rayman 3 where the innuendos are only likely to be picked up by slightly aged folk, having a bleep would instantly ruin that by alerting the unaware people, letting them know that something naughty was supposed to be there. It would have probably resulted in the game getting a T rating and it not being nearly as humourous.
