Fifo, FRAPS isn't anything related with the lag during the emulation. I can guarantee you this since I also played RR in the emulator without recording and there is lag in some areas of the game (and my computer isn't a fossil, at least for now). It is the graphical plugin that needs extra tweaks to run it perfectly.

Windows 8 runs on VMWare good too, but trying to use GameCube Emulator on it sucks. I know. But using the PCSX2 built-in recorder won't record the lagging. It'll still lag, but you won't see the lag on the final video. And I know that your computer isn't a fossil. Fifo, no double post please, and to reduce recording lag, go to task manager and disable two CPU's for PCSX2 when recording. This works if you have 4 CPU's

Well for TurboBoost users this will be an improvement because by disabling some cores will let you run in a higher frequency. However acording to my tests with PCSX2 that software doesn't give a shit to turboboost and stucks at the stock frequency. I'd suggest to let the program run in all available cores by selecting only the first core in taskmanager and then afterwards select all other cores. It works well with Flight Simulator but I haven't tested it out on PSCX2.
