Well, R3 TLOTLD is as far as Mordor as one can get, RO's on the other hand, does seem a little more fitting.

Hey peeps, I'm planning to start Rayman 3. I've never played it before, so I don't know much about the version differences. So can you help me out here? Which of the following versions would you recommend me to play and why: HD (specifically, the PSN one), GameCube, PC, or PS2?

Also, one thing to keep in mind: I heard that only the HD version features subtitles. Subs are a plus for me since I have trouble understanding subtitle-less cutscenes in English (my native language is Spanish, and while I can read English just fine, I find it hard to understand the words when someone speaks in English). Does the game have the option to change the voices' language, and if so, do you know if Spanish included?

PC version is best for you if you are Spanish because it has both Spanish sub and dub if I am not mistaking. Just configure it in configurator ;)

You can choose the language on each startup only in the PS2 version :P

It is also in GameCube version too. Not sure about Xbox.

I see, so all versions should do. Thanks for the responses!

Language aside, how do the versions compare? For instance, I heard that the GC one has extra content such as minigames. Are they included in R3HD? I also heard that HD is the glitchiest version. Are the bugs so bad that they spoil the experience, or they can be easily avoided? Can the PC version be played in HD, and is it true that it has control issues (if using a gamepad solves them, I have one)?

I got the HD version. It's good but I don't know how to increase my score aftyer I beat the game so I don't know how to unlock the last mini game.

collecting the additional Gamecube Games requires a GBA connector so its rather difficult to play them nowadays, yes the HD versions are the most glitchy and sometimes CAN hinder the experience, I suggest the latest PC version on the Ubisoft store, and it plays a lot better with a controller I'd imagine.
