Sorry to bother you, but it has already been done by me (for the PC version, Drolpiraat apparently made a good job with the PSX version I didn't downloaded his stuff yet) while I was trying to understand how does Rayman 2 works.

You can download a bunch of sounds here, even if it may be incomplete, I don't really know.
