I never said those all games had italian as a language. Rayman 2 DOES have italian voice acting avalible and text on italian in PS1 version.

Rayman 2 Dreamcast version uses language depending on what language have you set your console on. It does not have in-game option.
I am playing Japanese Saturn version in video you showed so thats why there was no other language avalible (intro is in Japanese and text is in English).
European Saturn version has different languages, but not in-game. You must put your console on different language in order for game to be displayed on that language.
