Are there any rare or collectible Rayman games or releases of games? For example, full-art game covers that are NOT re-releases, or box-sets.

I'd say that the big box versions of the older rayman games are considered to be collectables. Then there are also some collector's editions and special packs.
The atari jaguar version of R1 is definitely a rare piece, especially since the price has gone up lately.
