For example, I just saw a Rayman reference in a short film called Trials for Miles, which was pretty neat:

I once heard the BGM of Main Gallery in Rayman Legends on a Chinese variety show (but I have forgotten the name of that variety show)

Interesting, I didn't know about that.
Here is another one. In the opening of the animated web series Metrecalia, for a few frames you can see the characters imitating the cover art of Rayman Legends.
Was the Rayman 1 instance not a reference to something else?

Yes, according to Wikipedia:
"Joe's Diner" is a placeholder name for a fictional or hypothetical everyman's restaurant. Although there are franchises that use the name, its rhetorical use is often to describe a small, local business contrasted against large businesses or franchises. The phrase "Eat at Joe's" is a complementary fictional or hypothetical typical advertisement for such an establishment, and has itself become a snowclone in the form of X at Joe's, Eat at Y's, or simply X at Y's.
I guess there is nothing to specifically link those signs to Rayman, it just happens that Rayman 1 and Eddsworld made a reference to the same thing.

I'm beginning to think we ought to have some policy about dubious references and trivia, because I have seen the odd tidbit on the Wiki where I can see the potential of a link, but it's not so firm that I'd consider an outright link to be there.
I guess put simply, if there's reasonable doubt, then leave it out. As I've said before, I believe the Wiki's meant to be reference material based on what's there, not speculative based on perceived inference and individual interpretation. Considering the citogenesis phenomenon, I feel it's more important we don't overtread there.
