I would think that if there were leftovers from the SNES version, they would've been found in Rayman Designer. Though the boss sprites are removed from that for some reason, so maybe they removed some other stuff too. I think Chacanger hacked Rayman Junior and found it contains everything though. In fact, he hacked Rayman 1 as well IIRC but never found anything significant from the SNES version.

I still find that eighth note exit sign peculiarly interesting. I still wonder if there might have been exit signs for each world, since that one looks like it could be for Band Land...but if everything's already been found, then it leaves me curious.

100% real.
The portal comes in two parts, one background and one foreground, so it creates the effect of Rayman "walking into" it. Though of course unless you're clever with your map design he can just walk right out the other side.
