The Fairy Council where Murfy mentions it, and any level where you hit Globox, he has a chance of saying "you were nicer in Rayman 2". I can't think of anything else off the top of my head.
 
Because he was red, but then he got into an accident when picking berries and accidentally ate a flying creature who called for help, then many other flying creatures showed up and stung him. Afterwards, he was filled with blue welts, and after all his welts healed, he remained blue.

I'm not sure if you include PS1 games, if so, my answer is Rayman 1. If you only mean PS2 games, then Rayman M.
