You mixed two names together. So you mean one of the following:
"The Sanctuary of Stone and Fire"
"The Sanctuary of Rock and Lava"
I don't think you mean "Beneath the Sanctuary of Rock and Lava", though.

In order to get 100% at the game select menu you have to find a secret lums in the Tomb of the Ancients level. In the first part of the level, after having activated the 3 switches that raise the platforms in the poisonous pond, jump on these floating platforms and climb the web on the other side. Once at the top, instead of just falling down the pit, place yourself at the edge of the wall, to the left (when facing the poisonous pond), Then, fly over the pond, go as far to the left as possible to find a narrow hall in the wall, and land on the platform. Follow this path and kill some pirates to get the 1000th lums in the skull's eye.

I did not have time to describe the path to the 1000th lums so I picked it from ComputerUnderground.

By the way, there are 8 cages in the Sanctuary of Stone and Fire, so we cannot know which one you have not found yet.
 
I finally found the last lum! :D Let's party! I'm really happy, now my game is 100%, all cages, all lums, YEAHHHH! And by the way, Jman, go to http://www.gamefaqs.com, search for rayman 2 and you'll find the location of all cages :wink:

I want to get to the Tar-ay-zan avatar, I like that, and then the rayman avatar's which are rayman 1,2 and 3, and I've heard that Hunchman will create more avatars which will be from rayman 4 :)
