Nothing? At least I don't recall anything happening (they just bounce around). Maybe you need to spend a really long time, or maybe it's specific to some versions?
 
I'm not even sure this is true since I never tried, but I heard that they give you red lums if you hit them. I think this was only one version though.

There's the picture of the Livingstone's where you throw the plum on the stick, and Globox also says you were nicer in Rayman 2 if those count
 
There's also the Ly statue in the Longest Shortcut and Razorbeard and his crew in Hoodlum Headquarters.
 
Oh yeah, that Hoodlum Headquarters thing is pretty cool also. :)

Oh, shoot. I played all these, but it's been a while. I can probably do ~70% off the top of my head, but will have to think more about the rest. So I'm gonna let someone else try first. :)
 
Since no one answered so far - here is my shot.

Rayman Advance: same bosses as Rayman 1 - Moskito (and Bzzit, if you consider him canon), Mr Sax, Mr Stone, Space Mama, Mr Skops, Mr Dark.

R3 GBA: I remember Jano, Scaleman, and Razorbeard, of course. There must be a few others, who I don't remember.

RRR GBA: I only remember the boss Rabbid in "Ginger Bunny Bread" (the one that gets impaled at the end - ouch!). I think there is also this last boss who looks like an angry ball or something. I believe there are bosses at the end of every world, but they must be awfully non-descript and I have no memory of any details. Except most of them are probably Rabbids.

Hoodlums' Revenge: Begoniax, Infernal Machine and Reflux for sure (I think Reflux takes over Globox at one point). I am sure there is something else, because I think that there are more than 3 boss stages, but can't quite recall what.

Rayman 1 was all correct

Rayman 3 was Missing the machine from rayman 2 as im gonna refer it to
And razorbeard should have been called grogloth but ill count it
And rocky

RRR had the super antitoon as the first boss, not last
All others were just thr giger bunny bread rabbid with different attacks, with the mentioned level having a different set of sprites
And the last boss being the rabbit mother ship

Rayman Hoodlums revenge had a boss called fire monster...which is a recoloring of reflux last form from of rayman 3
