I actually would choose red velvet over chocolate. Simply because I love cream cheese frosting and most of the time that’s what I find on a red velvet cake!

I’ve never had a red velvet cake but I looked it and it ingredients up and it sounds SO GOOD!!! The vinegar must be rather interesting, though

Yup, but flan de turrón (crème caramel with torrone) is much better 
Also, it's a bit more "special" because turrón (torrone) is only sold in common supermarkets by the end of the year for Christmas, so unless you buy a lot and keep some of it for the rest of the year, or you go to a special shop, you wouldn't make this cake, let's say, in July

However, mayonnaise... If I remember correctly, it can substitute butter in the recipe (if you want to make cookies, for example), but I've never seen that in a real case

I imagine mayo being used in something like chocolate cake. You don't really taste it in the end, regardless if used in the right amount.

From doing research around, it seems mayo is used more for texture and makes a cake more moist. I know there are other ingredients in mayo (like maybe mustard and lemon juice), but it's really just an emulsion of oil and eggs isn't it?
