Super helicopter, riding the shell and riding the mosquito. Some others were good, but less memorable in my opinion.

I don't think the player should've been able to skip it, it's an actual part of the game, but there should definitely been a warning.
 
I am fond of the walking shell. Even though, it is frustrating (especially in the Wrong Temple from Sanctuary of Stone and Fire), it is pretty fun to mess around with and achieve some sick stunts, like on Iron Mountains. This is also the very thing that you use to skip Cave Of Bad Dreams in the Menhir Hills in Rayman Revolution.

The Teensie Highway is always pretty fun. Because of the highway itself. I also love the easter eggs that you spot in a few of them as well. The music is memorable for this as well.

The Barrel Rocket, I love as well. Frustrating too but it can be fun to mess around with as well. There is a glitch you can do with the Rocket Barrel that lets Rayman fly without the Barrel. I always found that pretty cool back when I discovered that glitch when I was younger.
 
This poll is nice but it's missing my favourite...the snowboard ride in Summit Beyond the Clouds.
