My issue with the Prison Ship is that it's very clearly supposed to be absolutely massive, considering the amount of slaves on board. But I never really felt like the game really got the scale across very well at all - in fact the whole game kind of suffers from this imo, the game clearly has a massive scale and is a living world, but it always felt more like a collection of random levels.

I believe the Prison Ship should have been a bit more epic... I guess the technology from those years didn't allow them to recreate the atmosphere they wanted?

Wow this is such a difficult choice. I'm going with the Woods of Light, because I think every level is near-perfect and the Woods of Light is just a tutorial level that's kind of boring. Side note: I think Whale Bay might be my favorite level, it's so beautiful!

I've put my full opinion on the Anniversary Edition on the Rayman thread, but "not entirely convinced by the soundtrack" about covers it. I like the new soundtrack as a Rayman 1 tribute album, but a remaster shouldn't permanently replace music without an option to have the originals.
I came here a little too late for "least favourite Rayman 2 level", but it's a close thing between the Sanctuary of Stone and Fire (a long slog) and the Crow's Nest (a kind of annoying final boss that doesn't really have much to do with the rest of the gameplay outside of the Prison Ship)

Perhaps a poll about the least favorite level in Rayman 1 would be good, or even something like "What's the level you are best at in x game?", don't you think?

As for the 30th Anniversary Edition, just like Electoon, I've already said a lot of things in the Rayman 1 thread, so I'll just say that while I'm disappointed by the UbiArtesque soundtrack and its ukuleles, the rest is pretty cool and I especially like the inclusion of the game design bible... although I haven't even had the time to look at it! The fact that they only included the English translation of the game kinda sucks, though.
On the subject of the Prison Ship, which I missed: I agree with everyone highlighting the huge missed opportunity in this level. In fact, I've already spoken about it in the past:
