But the monsters are whale-like beasts with a hand as their head. They grab you with their head, which is a hand with eyes on it. I think?

Ah yes it's in a lake or something and you only see it for a split second. Good eye.
 
In French, « paluche » is an old slang term for the word “hand”. Hence the name of the creature.
