The Rayman Wiki on Wikia refers to a Mr. Clay.

I believe I heard about this Mr. Clay somewhere in RPC, but I can't remember where.

I read it on Wikipedia a couple of years ago and mentioned it on RZ, and possibly here as well. I think that Mr Clay could have been a prototype boss for Picture City. That is, if he ever existed.

This one interests me the most. Wasn't Rayman 2 originally intended to have interactions with animals (the walking shell being the only thing that really stayed until release...)? It seems the Rayman series have had a lot of 'almost' with helpers. There were some helpers in Rayman 2, but they were pointless. You'd have to wait for a few seconds for Globox to stop hiding behind a rocks. Not to mention the dinosaurs in the 2D Rayman 2 prototype, which you'd ride. And you were supposed to be able to seduce-I mean entertain the rabbids to take control of them. Wonder what Ubisoft was thinking of with this concept. I can't get images of Pikmin out of my head, in this case.
The three following environmental creatures were abandoned to avoid overloading the universes with creatures and sending the player off on false trails.
False trails, eh? If I remember, the levels basically had walls to keep you from straggling....
