I know, and from experience I know that getting all the cages and having to revisit some of the toughest levels the game has to offer can be off-putting, but I do think those who do see through such an endeavour deserve a well reasoned reward for what they've accomplished.
As for the alternate character idea, I'd stick to alternate costumes, I know the UbiArt era has made a thing of multiple characters, but I'd prefer having Ray to himself in his debut adventure.

I know I sound like a real asshole for saying this, but something that is blatantly inferior to the original 320x240 PlayStation graphics certainly isn't something that I would want in an HD remake of R1.

Then you just got used to the gameplay and mechanics over time, it wasn't "too easy." That doesn't change the fact that beginners, probably including you at one point, struggle with the game quite a bit. Making the game any more difficult would probably lead to a great deal of rage-quitting from beginners, possibly making many of them give up, which was not what Rayman was intended for. Anyways, the difficulty is as fine as it is, though they could have Mr.Darks dare unlockable anyway without collecting the cages, and you earn some things for collecting all of them, a new ability, alternate ending, more levels, you get my point.

I made this 3D recreation of the Rayman 1 map a while back. I was considering doing a proper teaser just for fun. Maybe make a level in the same style.
