Q: There are two different kinds of lava in Rayman 2. What is the main difference between them concerning gameplay?
 
Plums can bounce on one, but dissolve and the other resulting in death.
Also, I'm not sure, but I think in Revolution you can't fly over the lava that kills the plums.

Wrong. You can fly over the yellow lava.
 
Yes and no. In the sanctuary of rock and lava you die when you hit the lava fall ( on the rotating platform )
 
I think Holy Crap is correct here. There's the lava with the hardened crust at the top that the plum can travel on and then there's the explicit lava that often appears in holes. This lava destroys the plum.
 
Ill explain: You have the yellow lava with rocks in it and red lava
This is the difference:

If a plum hits the yellow lava you can jump on the plum and ''ride'' on it
but if it hits red lava the plum burns and change into dust
