You can hit them with the green power up, or, when there are multiple Stumblebooms, go under one and let them hit by an other stumbleboom, which is throwing now a cocktail on the one one which you stand below.

Skops approach more to Rayman, making you "stuck" in the left side of the screen. Then he attacks with the sting.
