Hey, which version of Rayman 1 is it where Mister Dark steals only the Electoons and not the Great Protoon, and you actually fight him directly in the end, and at the end of the credits or something Electoons dress up in Mister Dark's cloak to play a prank on Rayman?

It's the Game Boy Color version if I remember correctly.
 
About Rayman GBC, does anyone get the feeling that it's meant to be the "canon" Rayman 1, from Rayman 2's perspective?
The world in it looks and feels a lot more like the Glade in Rayman 2, and since it's the only version in which Rayman actually defeats Mr Dark (which is mentioned in the R2 manual) it seems likely to me that Rayman GBC is what the developers thought Rayman 1 should have been like at the time they were making Rayman 2.
 
I just think of it as Rayman 2's world with Rayman 1's story line.

I'm sure there's a reason it's the only one in which Mister Dark dies. Perhaps it's because they thought, "What if?" If he only died in one version out of the others, then surely he's not meant to.be dead, right? Then again, the GBC was the last version of Rayman 1 made, wasn't it?

I agree with your thoughts. I always felt it was kind of an alternative R1 game but much more close to the R2 design, since almost everything obeys to the new style.
 
Well, according to Rayman timeline, Origins and Legends are sequels and not their own thing.
