I don't like to say this, but their official name is Mexican Skeletons. Not only this is supported by the flickr page featuring lots of artwork, but also the game's files, where they're named "MexicanSkeleton" too. Also, Michel Ancel called them Mexican Skeletons when he was showing off the Luchador's boss battle.
