There is nothing preventing them from having either created a separate set of sprites for Moskito which were red or having implemented a way to change its palette. I don't think we can really know what the reason was, so it's probably best to just state the facts we know, which are the colors used in the different versions, and not speculate as for the reason. I know we have trivia sections, but even these are always taken from facts or evidence we find in the game files, never just mere speculation.
