Rayman Legends

Both Rayman and famous rapper Snoop Lion were featured in a trailer for Rayman Legends on Xbox One and PlayStation 4.
Comic books
The Lapins Crétins
With the exception of the third volume, Rayman or another character of the Rayman series makes a cameo appearance in all the volumes of Thitaume and Pujol's Rabbids comic books.
Enfer & Parodie
This series of Yohann Morin, Jean-Christophe Almodovar and Thomas Borginet features many characters from popular culture in humorous situations.
The cover of the first volume presents several Rabbids.
In the second volume, Rayman appears page 29.
In the third volume, Rabbids appear page 18.

Mad

That animated sketch comedy television series featured an episode entitled "Adventures of TaunTaun / Everyone Loves Rayman". The latter segment is a combined parody of the Rayman series and the American sitcom Everybody Loves Raymond.

In this polish comedy TV series, the kids' room has got a Rayman Origins wallpaper with Globox visible on it.
Les Guignols de l'Info

The 29 October of 2014, the show has made a parody of Rayman Raving Rabbids : Sarko et les Soutiens Crétins.
Video games
Tonic Trouble
This is a Ubisoft game on which Rayman creator Michel Ancel worked. It was developed prior to Rayman 2: The Great Escape, largely in order to test the engine planned for use in that game. All characters in Tonic Trouble are limbless, like Rayman's species. Rayman himself appears briefly during the end credits of the PC version of the game.
Beyond Good & Evil

This is another Ubisoft game developed by Michel Ancel. It contains a hidden reference to the Rayman games: a distinctive pink mosquito can be found on the nose of a dead cow in the factory level.
Prince of Persia: Warrior Within

In that Ubisoft game, the player can find Rayman's telescopic fist, and use it as a weapon.
Asterix & Obelix XXL 2: Mission Las Vegum

That game features Roman legionaries based on several popular video game characters, including Mario, Sonic, Pac-Man and Rayman. A painting that can be seen on a wall shows a Rayman legionary pulling a rabbit out of a hat, despite the fact that the game was released a year before Rayman Raving Rabbids.
Academy of Champions: Football

In this Ubisoft game, Rayman appears alongside other characters of the company: The Prince of Persia, Sam Fisher from Splinter Cell, Altaïr from Assassin's Creed, Jade from Beyond Good & Evil and Rabbids. Rayman plays as a goalkeeper. In the shop, the player can buy Rayman-styled hat and gloves. Finally, if the player speaks with Rayman, he sometimes mentions Globox.
Minecraft

Rayman, Globox and Barbara appear as skin costume for the Xbox 360 version of that game.
Just Dance 2015

The background from the level Love Is All features scenarios from Rayman Legends and characters such as Sir Globrax, Murfy, Sir Rayelot, etc
Super Smash Bros. for Wii U and 3DS

In episodes 13 and 14 of season 2 of the web series, the Necromancer, boss of the second floor of the Galamadryabuyak tower, holds a strange skull. This is actually the head of Gumsi's staff. You could find this accessory on Rayman real-life sized statues produced during the release of Rayman 3.
